    Pepper Salad
    3 large red peppers

    3 large green peppers

    5 Tablespoons olive oil

    2 Tablespoons fresh lemon juice

    1/4 teaspoon salt

    pepper

    1 Tablespoon fresh parsley -- chopped

    2 teaspoons fresh basil or chervil -- chopped (optional)




    Recipe



    Preheat oven to 450 degrees. Place peppers on baking sheet & roast until

    soft & skin is black, about 30 minutes. Let cool slightly. Peel off skin

    & cut peppers into strips. Combine oil, lemon juice & pepper in a deep

    bowl. Add peppers and toss gently to cover. Cover & marinate at room

    temperature 1-2 hours. Mix in parsley and basil or chervil just before

    serving.

    Salad can be prepared ahead & marinated in icebox up to 24 hours. Bring to

    room temperature before serving.
