Recipe Introduction
Yogurt is an old, old food that's been around for centuries, but it didn't become popular in the U.S. until the 1980s. People now eat it for breakfast, lunch, snacks - or even as a frozen dessert. All yogurt is an excellent source of calcium, riboflavin (B2) and protein. It can also be low in calories and fat - just read the label.

ROD 6/20/2006 Plain Yogurt Day CUCUMBER YOGURT SALAD
CUCUMBER YOGURT SALAD
1 cup plain yogurt
2 large cucumbers
Fresh mint (to taste)
Optional Seasonings:
1 Tablespoon lemon juice
2 teaspoons chopped garlic
Salt and pepper
Recipe
1. Peel cucumbers and cut in half lengthwise. Scoop out the seeds with a spoon. Slice thinly.
2. Stir up the yogurt and spoon it into a mixing bowl. Add some chopped mint plus any other seasonings desired. Mix well.
3. Stir in the sliced cucumbers last. Cover the bowl with saran wrap or foil. Chill for at least an hour before serving.
