    SPINACH SALAD WITH BRANDIED BROWN SUGAR DRESSING
    Brandy Brown Sugar Dressing

    1 Tbsp brandy
    3 Tbsp firmly packed brown sugar
    2 1/2 Tbsp molasses
    1/4 cup balsamic vinegar
    1 tsp Dijon mustard
    3/4 cup vegetable oil
    1/4 cup olive oil
    Salt and pepper to taste
    Additional sugar or vinegar to taste

    2 bunches spinach, stems removed, torn into bite-sized pieces
    1/2 small red onion, thinly sliced
    8 large mushrooms, thinly sliced
    1/2 cup toasted chopped walnuts
    1/2 cup crumbled gorgonzola cheese

    Recipe



    Combine brandy, sugar, molasses, vinegar and mustard in bowl of food processor. Mix oils. With processor running, add oil in slow steady stream. Season and adjust to taste. Chill.

    Chop walnuts and heat in a dry skillet over medium heat until they start to brown, stirring continuously, then allow to cool. Toss spinach, onion and mushrooms with the dressing. Sprinkle walnuts and cheese on top.
