Salmon Salad

List of Ingredients
1 lb. smoked salmon, chopped
2 cups celery chopped
1/2 vidalia onion, chopped
2 sprigs parsley, chopped
1/2 to 2/3 cup bottled Catalina Dressing
Cucumber Dressing
1 cup yogurt
2 tbsp. lemon juice
1 tsp. sugar
1 tbsp. prepared mustard
1 cup cucumber, unpeeled, chopped fine
1/8 tsp. freshly ground black pepper

Fresh dill for garnish
Early in the Day:
Mix ingredients for cucumber dressing and store in refrigerator.
Toss salmon, celery, onion, and parsley in dressing and refrigerate for several hours (at least 4) until celery has softened. Serve on a bed of shredded lettuce with cucumber dressing on side.
Garnish each serving and cucumber dressing bowl with fresh dill sprigs.
