    Scallops and Arugula Salad

    Ingredients
    3/4 oz Arugula
    1/4 oz. Parmesean cheese
    1/4 oz. Apple-smoked bacon
    1 orange (segmented)
    1/2 granny smith apple (thinly sliced)
    2 oz. Orange balsamic vinaigrette
    a pinch of salt and pepper
    1/4 oz. Citrus vinaigrette


    Procedure:

    Season scallops lightly with salt and pepper. Heat skillet until smoking. Carefully place scallops in pan and cook until caramelized. Remove scallops from pan and set aside.
    In a mixing bowl, combine Arugula, oranges, bacon, balsamic vinaigrette and pinch of salt and pepper. Combine these ingredients with tongs.
    Take the core out of the apple and slice thin.

    To Plate:
    Place sliced apples on plate.
    Place Arugulua mixture over apples.
    Slice scallops and place on top f Arugula.
    Drizzle a splash f citrus vinaigrette over scallops.
    Finish with a little parmesean cheese.
