    Spinach Salad with Mandarin Orange Poppy

    List of Ingredients




    1 lb. fresh spinach
    2 red pears (small), cored and thinly sliced
    1 can mandarin oranges, drained (11 oz)
    1/2 cup alfalfa sprouts

    Dressing:
    2/3 cup unsweetened orange juice
    3 tbsp water
    2 tbsp white wine vinegar
    2 tsp cornstarch
    2 tsp sweet-hot mustard
    2 tsp honey
    3/4 tsp poppy seeds

    Remove stems from spinach. Wash leaves thoroughly, and pat dry on paper towels; tear into bite-size pieces. Arrange spinach, pears, mandarin oranges, and alfalfa sprouts on each of 8 salad plates. Drizzle each salad with Orange-Poppy Seed Dressing.
    Makes 8 servings.

    Orange-Poppy Seed Dressing:
    Combine first 6 ingredients in a medium saucepan; stir well. Bring to boil over medium heat; cook 1 minute or until thickened, stirring constantly. Place mixture in a bowl, and stir in poppy seeds. Cover and chill.
    Makes 1 cup.
