Summertime Vegetable Salad
2 cups fresh broccoli - small florets
2 cups fresh cauliflower - small florets
1/2 cup chopped celery
1/2 cup chopped red or green bell pepper
1/2 cup chopped onion
1/4 cup finely grated carrot
1 cup low fat mayo
3 T. lite sour cream
1/4 cup sugar
3 T. grated parmesan cheese
3 strips of bacon, fried and crumbled
Recipe
Toss vegetables together in a large bowl. In a separate bowl, combine mayo, sour cream, sugar. Pour over vegetable mixture and toss to coat. Cover and refrigerate for at least an hour before serving.
Serve chilled, topped with parmesan cheese and crumbled bacon.
