    TOMATO AND CUCUMBER SALAD

    SERVES 4

    This is a great way to use tomatoes and cucumbers when they are at
    the peak of flavor.

    INGREDIENTS

    2 large ripened tomatoes, sliced
    1 large cucumber, sliced
    Fresh basil leaves, chopped
    Salt and pepper to taste
    Red wine or Balsamic vinegar
    Olive oil

    Recipe



    Place the tomatoes and cucumbers on a platter in alternating and
    overlapping layers. Sprinkle with basil, salt and pepper. Drizzle
    with vinegar and oil. (May be prepared up to 1 hour before serving
    and kept at room temperature.)

    Note: When the tomatoes and cucumbers are in season and very
    flavorful, you do not need much vinegar and oil. Use more only if
    the flavor needs some help.
