Tortilla Shell Fresh Fruit Salad

flour tortillas
extra-virgin olive oil
1 cup water
1 cup couscous
1/2 teaspoon sea salt
1 tablespoon olive oil
juice of 1 lemon
salad greens, especially spinach
sliced fresh berries and other fruits
2-3 dried apricots or prunes, snipped
2-3 mint leaves, snipped
1/3 cup olive oil
1/4 cup raspberry vinegar
1 teaspoon sugar
1/4 teaspoon fine sea salt
1/4 teaspoon or more Zip or cayenne
Recipe
Lightly brush each flour tortilla with olive oil and drape it into the bottom of a microwave safe plastic dish or the base of microwave popcorn popper. Even a microwave bacon rack will do. Tuck wads of waxed paper in and around the tortilla to make it take shape. Microwave one at a time on high for about 4 minutes, or until it browns and crisps. Remove to serving plates. In a batter bowl, combine the water, couscous, salt, olive oil, and lemon juice. Cover. Microwave on high 3 minutes. Fluff with a fork. Cool. Pile some of the couscous mixture into the prepared shell. Slice the fresh fruits and arrange over the couscous. Snip on the dried fruits and mint leaves. In a glass measuring cup, whisk together the olive oil, vinegar, sugar, salt, and Zip. Drizzle over the fruits, garnish, and serve
