    WILTED SPINACH DUCK SALAD

    Roasted Shallot Viniagrette:

    6 Slices Cooked Bacon
    4 Roasted Shallots
    tsp Granulated Garlic
    Pinch Ground Pepper
    Tbsp Dry Sherry
    2 oz Apple Cider Vinegar

    Place all the above ingredients into a food processor. Slowly add 4oz Olive Oil

    Roast Duck Leg Quarters and pick meat from bone. In a Saute Pan heat Roasted Shallot Viniagrette, Sliced Shiitake Mushrooms, Chopped Cooked Bacon and Duck. When heated, toss into Bowl with Fresh Spinach, Mix to wilt Spinach. Put on Plate and Top with Crumbled Feta Cheese.

    Serves 4
