Waldorf Chicken Salad

Waldorf Chicken
Dressing:
1 cup nonfat plain yogurt
2 T Mayonnaise
1 T Fresh Lemon Juice
2 T Dijon Mustard
1 tsp minced fresh thyme
1/2 cup apple juice
salt and pepper to taste
Mixture:
2 lb cooked boneless -skinless chicken ( cubed or shredded )
1 cup seedless grapes - sliced in half
1/2 cup toasted walnuts
1 cup diced apple - skin removed
In a medium bowl combine dressing ingredients and whisk until combined and smooth - no lumps
In large bowl add Mixture ingredients and fold in dressing a half cup - 2 ounce laddle - at a time.
Add dressing until desired consistancy. You may have reserve dressing.
Chill for one hour. Serve on anything
