Watermelon Salad

(Serves six)
Ingredients
5 cups seedless watermelon (large dice)
¾ cup feta crumbled
¼ cup sliced mint
2 nectarines sliced
½ cup balsamic vinaigrette
3 Tbsp. balsamic vinegar
1/8 tsp. sea salt
¼ cup extra virgin olive oil
Method
In a bowl, whisk together salt and vinegar until they are dissolved. Slowly drizzle in the olive oil while whisking it together and set aside. On one large plate or six chilled plates arrange the watermelon, nectarines, feta and mint. Then top it off with the vinaigrette. Enjoy!
