    Wild Rice & Artichoke Salad

    Ingredients
    1 package(s) 6 oz. Wild & Long Grain Rice
    1 can(s) 6 oz. marinated artichoke hearts (drained & chopped)
    1/3 cup(s) mayonnaise
    1 tsp Curry powder
    1/2 medium green bell pepper (chopped)
    4 green onions (chopped)
    8 medium green olives (sliced)
    1 can(s) Mexi-Corn (drained)

    Recipe



    Directions
    Cook rice according to package directions; allow to cool to room temp.

    Add remaining ingredients and toss well. Salad may be served chilled or at room temp.


    Comments

    * To serve as a luncheon main course, add 2 cups of chopped cooked chicken or shrimp.
    Serves 4-6
