    Fried Pork Sandwiches

    4 slices (about 1 pound) boneless pork chops, or pork tenderloin, cubed or
    pounded
    1/2 cup buttermilk (not lowfat)
    1/2 to 1 teaspoon salt, to taste
    1/4 teaspoon black pepper, to taste
    1/4 teaspoon paprika (optional)
    1/8 teaspoon garlic powder (optional)
    1 cup self-rising flour (more if needed)
    1 or 2 fresh eggs, lightly beaten with 1 teaspoon water

    Peanut Oil for frying

    Seeded Sandwich Rolls (4)
    Mayonnaise
    Catsup
    Mustard
    Lettuce (optional)
    Sliced Tomatoes (optional)
    Sweet Sandwich Pickles

    Prepare pork by trimming of excess fat and any bone. Buy it or have it cubed,
    or pound it thoroughly on both sides -- I like to use a clean glass Coca-Cola
    bottle for this purpose (turned upside down).

    Place pork in a bowl and marinade it in the buttermilk for about 20 minutes.
    Remove pork from buttermilk; drain it well.

    Preheat Oven to 350 Degrees F.

    Sprinkle pork with salt, black pepper, paprika and garlic powder -- Give the
    buttermilk to your dog or cat unless you also plan to fry some green tomatoes.
    If you do, reserve the buttermilk.

    Place egg in a bowl with 1 teaspoon water. Lightly beat it. Place flour in
    another bowl.
    (I like to add a sprinkling of salt and black pepper to the flour also.)

    In a large heavy skillet over medium heat, heat enough Peanut Oil to halfway
    cover the chops. Test for right temperature by dropping 2 or 3 drops of water
    into the hot oil. When it sizzles, you will know it is ready.

    Now use one of the three following methods to coat your pork. The choice is
    yours:

    1. Dip pork into egg, drain off excess; coat well with flour and place pork
    in hot oil.

    2. Lightly coat pork with flour, dip it into the egg and then coat it with
    flour AGAIN and place in hot oil.

    Do NOT overcrowd the pan. With an egg turner or spatula, lift each chop
    gently as it begins to fry on each side. Do NOT turn. Turn only when the pork is medium brown on each side. Avoid turning more than once for best results.
    When meat is done, remove it to a RACK to drain off excess grease.
    Place seeded rolls (4) in oven at 350 Degrees F. to warm.
    To assemble, offer: mayonnaise, catsup, mustard, pickles, lettuce, tomato
    slices.

    Serve with: Potato Salad or French Fries and/or Baked beans
