    serves one
    Ingredients:
    6 oz chicken breast
    1 flatbread (Greek Pita or Indian Naan available at local supermarkets)
    1.5 oz roasted red peppers
    1 slice provolone cheese
    2 tablespoons mayo
    2 fresh basil springs
    1 teaspoon lemon zest
    1 roma tomato
    1 lettuce leaves
    4 tablespoons olive oil
    1 teaspoon salt
    1 teaspoon pepper
    1 teaspoon dry oregano

    Procedure:
    Turn on the oven on "Broil" setting or preheat to 425 Degrees Faranheit. If you have a pizza stone place it inside the oven and let it get hot. In the meantime, season the chicken with salt, pepper and oregano. Set aside. Heat the olive oil on medium-high in a nonskid pan and place the chicken skin side down first and cook it for 3-4 minutes on each side untill fully cooked. Set the pan aside from the burner. Cut the basil thin, add the mayo and lemon zest, squeeze in a little lemon juice and mix all ingredients together.
    Cut the chicken in two and place it on the flatbread, covering half part of the bread. Add the roasted red peppers and top with provolone cheese. Place in the oven on the pizza stone. If you don't have a pizza stone, a baking sheet will do the job. Bake untill the cheese is melted an the flatbread becomes golden-brown around the edges. Remove from the oven, spread the mayo on the sandwich, top with lettuce and tomatoes and serve.
