    Lobster BLT sandwich

    • 2 ea 4-5 oz lobster tails - raw
    • 6 slices good quality sour dough or multigrain bread
    • 1 lg tomato sliced
    • 6 slices thick smoked bacon cooked
    • 3-4 oz baby mixed greens
    • Salt and pepper
    • Lemon tarragon aioli

    Lemon Tarragon Aioli
    • 1 cup mayonnaise
    • 1 to 2 cloves fresh garlic
    • 2 tablespoons fresh tarragon leaves
    • 1 /2 teaspoon lemon zest
    • 3 tablespoons lemon juice
    • 1 teaspoon Dijon mustard
    • Salt to taste

    • Remove the lobster meat from tail and cut into bite-sized pieces
    • Season with salt and pepper and sauté in a little olive oil until done (3-4min)
    • Set-aside to cool
    • Toast the bread slices in toaster
    • Assemble the sandwich with the lobster meat on top of the first slice of bread along with a little of the aioli
    • Then add another slice of bread
    • Top it out with the tomato, bacon, mixed greens, more aioli, and the last slice of bread
    • Recipe makes 2 sandwiches - 3 slices of toasted bread per sandwich


    Preparation
    In a food processor blend the mayonnaise, garlic, tarragon, lemon zest, lemon juice, and mustard. Add salt to taste.
