    Homemade Brown Gravy


    Thick:
    2 tbsp fat*
    2 tbsp flour,
    1 c liquid**,
    salt & pepper to taste
    Thin:
    1 tbsp fat*,
    1 tbsp flour,
    1 cup**
    salt & pepper to taste

    Recipe



    Pour all liquid from pan into measuring cup (fat will rise to top); skim off fat; return to pan measured amount needed; save liquid & set aside. Blend in flour. Place pan over low heat; stir scraping bottom of pan to loosen meat pieces & cooked-on juices, until fat-flour mixture is rich brown. Remove from heat; gradually stir in measured liquid. Cook over low heat, stirring constantly, until gravy thickens & boils 1 minute. Season to taste; color with gravy flavoring, if desired. Strain gravy; spoon some around meat; pass remaining in bowl.

    Makes 1 cup gravy

    *From cooked roast or pan-cooked meat or added, if needed, to make gravy.

    **From cooked meat plus water or stock, if needed
