    Idaho Green Onion Mash

    3 large Idaho potatoes (peeled and grated)
    1 cup Andouille sausage (frozen)
    1/4 cup white wine
    4 Tbsp. unsalted butter
    2 Tbsp. green onions (minced)

    Recipe



    Bring 5 cups of water to a boil and add diced potatoes. Cover and let cook for 10 minutes. Grate Andouille while frozen. Brown grated sausage in a hot pan and deglaze with 1/4 cup white wine. Reduce wine and sausage mixture until little or no wine is left. Combine Andouille mixture and potatoes in mixer and whip until smooth and fluffy. Place in a container, cover, and refrigerate until completely cold, approximately 15 minutes. When ready to serve, patty out 3/4 cup potato mixture. Dredge in flour and pan fry in a little oil
