    BEEF STEW WITH RED WINE AND MUSHROOMS (Tuesday)
    Makes 5 servings

    Preparation time: 15 minutes

    Cooking time: 4 hours on high; 8 hours on low

    1 1/2 pounds well-trimmed beef stew meat, cut into 1 inch pieces

    2 (8-ounce) packages sliced crimini mushrooms

    1 medium onion cut into 1/2 inch wedges

    1 1/2 pounds red potatoes cut into 1 inch pieces

    1 (1.2- to 1.8-ounce) packet beef stew seasoning mix

    1 cup dry red wine

    1/2 cup water

    Place beef, mushrooms, onion and potatoes in a 4-quart or larger slow cooker. In a small bowl, mix together seasoning mix, wine and water; pour over beef and vegetables; mix to coat and cover. Cook on low 8 hours or high 4 hours. Stir before serving.
