    List of Ingredients




    ½ cup finely chopped celery
    ½ cup finely diced carrots
    ½ cup finely diced onions
    ¾ cup butter
    ½ cup flour
    ½ teaspoon dry mustard
    2½ pints chicken stock
    8 ounces grated cheddar cheese
    2 tablespoons grated Parmesan cheese
    1 (12 ounce) bottle or can of beer
    salt and pepper to taste



    Recipe



    Sauté vegetables in butter till tender, but not brown. Blend in flour, mustard and chicken stock. Cook 5 minutes. Blend in cheeses and beer. Simmer 20 minutes. Season to taste. NOTE: If reheated, use low heat as it scorches easily.
