    Description
    Squash stew with eggplant and pasta! Can be served hot or cold.

    Ingredients
    4 yellow squash cut 1/4 in
    2 eggplants cut 1/4 in
    2 large red peppers sliced long
    2 large green peppers sliced long
    1 large onion chopped
    8 plum tomatoes chopped
    1 garlic clove chopped
    4 tbsps of olive oil
    6 servings of pasta, preferably #8 or 9 spaghetti

    Directions
    Mix 2 tbsp of olive oil, onion, eggplant and garlic in a sauté pan. Cook over medium heat until onions are transparent, about 10 minutes. Add 1 more tablespoon of olive oil then add the rest of the ingredients (except pasta) and cook until the squash is soft, eggplant is soft, about 30 minutes. Add cooked al dente pasta to soup. Serve hot or cold.
