    Creamy chicken rice soup

    1/2 cup chopped onion
    1 medium carrot, chopped
    1 celery rib, chopped
    1/2 tsp minced garlic
    1 Tbsp oil
    2 cans (14.5 oz) chicken broth
    1/3 cup uncooked long grain rice
    3/4 tsp basil
    1/4 tsp pepper
    3 Tbsp flour
    1 can (5 oz) evaporated milk
    9 oz frozen diced cooked chicken, thawed

    Recipe



    Sute onion, carrot, celery, and garlic until tender. Stir in broth, rice, basil and pepper. Bring to boil. Reduce heat, cover and simmer 15 minutes.

    In a small bowl, combine flour and milk until smooth. Stir into soup. Bring to boil, cook and stir for 2 minutes or until thickened. Stirin chicken, theat through.
