    I made this to use up some ham I had in freezer, and it turned out super-good! Hubby loved it!


    List of Ingredients




    Ham and Potato Chowder

    1 to 2 tablespoons butter
    1/2 cup chopped onion
    1/4 cup chopped celery
    1/4 cup finely chopped carrots
    3-4 good-sized potatoes, peeled and cubed
    1 cup diced ham
    1 can (14-1/2-oz.)chicken broth
    Water
    1 can evaporated milk (I only used about 3/4 of the can
    Salt and pepper to taste
    Instant mashed potatoes (about 1/4 cup)

    Melt butter in large Dutch oven, saute onion, celery and carrots for about 3 minutes. Add potatoes and ham. Pour in chicken broth and enough water to just cover everything. Bring to a boil and simmer until potatoes and other vegetables are tender. ( I use a hand masher and mash just a few to help thicken, I like mine sort of chunky). Add evaporated milk, salt, pepper and a pat or two of butter, if desired. Heat through, but don't boil. I thicken it alittle with instant mashed potatoes...usually 1/4 cup or alittle more.
    Serve hot with oyster crackers, or homemade bread and butter to dunk in the soup!
