    Italian Sausage Potatoes Peasant Stew

    2 pounds spicy Italian sausage links, cut in 1-inch pieces, leaving casing on (see cook's notes)

    2 pounds (about 6 medium) boiling potatoes, peeled and cut into chunks

    1 large or 2 medium onions, peeled, halved and sliced

    1 can (28 ounces) whole Italian plum tomatoes

    Water

    Salt and pepper to taste

    Cook's Notes: Regular seasoned Italian sausage links may be used but the resulting dish will not be quite

    as flavorful and will require adding some seasoning of dried and crumbled oregano leaves and garlic. If

    desired, substitute sausage make with ground turkey. To keep sausage from breaking out of casing and

    potatoes from becoming mushy while cooking, stir gently rather that with vigor.

    Procedure: In a Dutch oven or large pot, layer the sausage pieces, potato chunks and sliced onion. Crush

    the tomatoes by hand and add to pan along with all their juice. Fill can with water and add, using more if

    necessary to be sure ingredients are just covered with liquid.

    Cover pan and bring to a slow boil over medium-high heat, stirring occasionally. Reduce heat , cover and

    simmer, about 2 hours or until sausage is cooked through and potatoes are fork tender. Stir several time

    while cooking.

    Presentation: Ladle into soup bowls and serve with hot crusty bread for dunking and sopping.
