    MAI'S SHERRIED CARROT SOUP

    List of Ingredients




    1 onion, chopped
    6 carrots, peeled & cut into 1/4-inch thick slices
    3 c cicken broth
    1/2 c heavy cream
    1/4 c (or to taste) med. to dry sherry
    2 T unsalted butter
    1/4 tsp. ground ginger
    1/4 tsp. ground cinnamon
    White pepper to taste
    Chopped fresh parsley leaves for garnish
    4-5 Restaurant-size croutons

    Cook carrots and onion in chicken broth; bring to boil, reduce eat and cook, covered, until tender over low heat so not to reduce stock too much. Put in food processor or blender and process until perfectly smooth. Return to heat and add next 6 ingredients. Simmer for 15 minutes, stirring often. Garnish individual bowls with large croutons.
