    List of Ingredients




    3/4 lb. lean salt pork, rind removed and diced into small pieces
    1 large large onion, chopped
    2 tbsp. butter or maragine
    2 to 3 (15 oz. size) cans of creamed corn
    6 to 7 medium sized potatoes, diced and then cooked
    1 1/2 (12 oz. size) cans evaporated milk
    1 1/2 cups regular milk
    Season to taste (I don't use salt as it would make it too salty for my taste)

    Melt butter In the bottom of a small stock pot over medium heat. Add salt pork and cook until almost done (about 10 minutes). Add onions and cook until translucent (about another 5 minutes).

    Add creamed corn, potatoes, evaporated milk, and regular milk. Stir well to mix. Add seasonings. Reheat over low heat, being careful not to bring to a boil. You don't want it to curdle!

    Serve with crackers or corn bread. Serves 6 to 8 people.
