    Southern Sausage Stew from David
    2 14-ounce cans stewed tomatoes
    1 teaspoon cayenne pepper
    1 small head cabbage, chopped
    1 17-ounce can corn kernels, drained
    1 16-ounce can black-eyed peas, drained
    1 pound smoked sausage, cut into 1/4-inch-thick pieces

    Recipe



    In a 5-quart Dutch oven, combine tomatoes, cayenne, and cabbage; cook over medium heat until cabbage wilts. Add corn, black-eyed peas, and sausage, stirring to gently mix. Cover and simmer for 20 minutes or until cabbage is tender.
    Serve with fried corn bread.

    (Yield: 4 servings)
