    Spicy Chicken Soup

    1 pound boneless, skinless chicken breasts, cut in chunks
    1 large green or sweet red pepper, coarsely chopped
    2 teaspoons chili powder
    1 teaspoon garlic powder
    2 cans (14-1/2-oz. each) chicken broth
    1 package (10-ounce) frozen whole-kernel corn
    1 cup cooked rice
    1 teaspoon chopped fresh cilantro or parsley
    1/4 teaspoon (or more to your liking) hot pepper flakes
    5 lime wedges (garnish)

    Coat a 3-quart saucepan with nonstick cooking spray; heat 1 minute. Add chicken, pepper, chili powder, and garlic powder; cook 5 minutes.
    Stirring often. Add broth, corn and rice. Bring to a boil. Cook over low heat for 10 minutes or until chicken is done. Stir in cilantro. Sprinkle with hot pepper flakes, if desired. Garnish with lime wedges.

    Serves 5
