    Dick Clark's Mushroom Soup

    Dick Clark's Mushroom Soup



    1 pound fresh mushrooms
    1 onion
    3 tablespoons butter
    1 tablespoon olive oil
    1 clove garlic, split
    1/4 cup tomato paste
    5 cups chicken stock
    1 teaspoon marjoram
    salt
    pepper
    1 teaspoon lemon juice
    3 tablespoons red wine



    Mince onion with a food processor fitted with a steel blade. Cook the onion and garlic in a heavy saucepan in one tablespoon butter and olive oil until just beginning to brown. Discard garlic.

    Separate mushroom stems from caps. Mince the stems and one cup of mushroom caps in the food processor. Add to onions with two tablespoons butter and saute about five minutes.

    Add tomato paste and chicken stock, mixing well. Add seasonings, lemon juice and wine and simmer ten minutes. Taste for final seasoning.
