    Weight Watcher Points – 3 Points

    1 large head romaine lettuce (1-1/2 lbs.), torn into bite-size pieces
    1 large head radicchio (3/4 lb.), torn into bite-size pieces
    1/4 cup white wine vinegar
    4 flat anchovy fillets, finely chopped
    1/2 teaspoon freshly ground black pepper
    1/4 teaspoon salt 6 tablespoons extra-virgin olive oil
    1 cup (4 oz.) fresh Parmesan cheese shavings

    Combine romaine and radicchio in large bowl. 2. For dressing, whisk vinegar, anchovies, pepper and salt in medium bowl; gradually whisk in oil. Toss lettuces with dressing, then gently toss with Parmesan shavings. Makes 8 to 10 servings.

    Make-Ahead Tip: To make ahead, prepare lettuce mixture and dressing. Transfer lettuce mixture to a large resealable plastic storage bag; seal. Cover dressing. Refrigerate up to 24 hours. To serve, toss as directed.
