Weight Watchers Spinach and Cheese Casserole
Makes 8 servings

2 cups cottage cheese
1 10-ounce package frozen chopped spinach, thawed and well drained
1/3 cup crumbled feta cheese
3 eggs, beaten
1/4 cup butter or margarine
3 tablespoons all-purpose flour
2 teaspoons minced dried onion
Dash ground nutmeg

Grease a 1-1/2-quart casserole; set aside. In a large bowl, combine cottage cheese, spinach, feta cheese, eggs, butter, flour, onion, and nutmeg; mix well. Transfer mixture to the prepared casserole. Bake, uncovered, in a 350 degree F oven about 45 minutes or until center is almost set (an instant-read thermometer inserted in center should register 160 degrees F).
