    We had this often. It was a great way for Mom to use up the old bread.

    List of Ingredients




    2 cups dark, seedless raisins
    Boiling water
    12 slices white bread...not fresh
    6 eggs
    1 1/2 cups sugar
    1/2 tsp. salt
    3 cups milk
    1 tsp. vanilla

    Recipe



    Pre-heat oven to 350 degrees.
    Generously butter a 9 x 13 baking pan.

    In a small bowl, plump raisins by covering
    with boiling water for 10 minutes.
    Drain thoroughly on paper towels.

    Trim crusts from bread slices.
    Arrange half of slices in pan.
    Sprinkle raisins over bread and
    top with remaining bread slices.
    Make sure no raisins are exposed or
    they will burn during baking.

    In large bowl, beat eggs until light.
    Beat in sugar and salt.
    Stir in milk and vanilla.
    Pour mixture over bread.
    Bread should be completely covered with egg mixture.
    Add more milk if necessary.

    Bake 45 minutes or until top of pudding is lightly browned,
    the pudding is firm to the touch and a knife inserted halfway
    between the sides of the pan comes out clean.

    Serve warm or cold with light cream.

    Serves 12.
