    List of Ingredients




    Mocha Cake:

    2 cups all-purpose flour
    1 2/3 cups sugar
    1 1/3 cups water
    2/3 cup butter or margarine, softened
    3 eggs
    2 tsps. instant coffee
    1 1/2 tsps. baking soda
    1 tsp. vanilla
    1/2 tsp. baking powder
    1/2 tsp. salt


    Mocha butter frosting:

    1 16-oz. package of confectioners' sugar
    1/2 cup butter or margarine, softened
    1/4 cup cocoa
    1 Tb. milk
    1 tsp. instant coffee
    1 tsp. vanilla
    1/8 tsp. salt

    Recipe



    Mocha Cake:

    Preheat oven to 350 degrees.
    Grease two 9 inch round cake pans.
    Coat bottoms and sides of pan lightly with cocoa.

    Into large bowl, measure 2/3 cup cocoa and remaining ingredients, except frosting ingredients.

    With mixer at low speed, beat until just mixed.
    Increase speed to high; beat 4 minutes.

    Pour batter into pan.

    Bake 30 minutes or until fork inserted
    in center comes out clean.

    Cool cake in pans on wire racks for 10 minutes.

    Remove from pans; cool completely.


    Mocha Butter Frosting:

    Cream butter or margarine till light and smooth.
    Add cocoa and coffee and mix till well blended.
    Add milk and then vanilla and salt and beat till creamy.

    Add more milk, sparingly, if needed.

    Prepare one cake layer, rounded side down, on cake plate.
    Spread with about 1/3 of frosting.
    Top with second cake layer, rounded side up.
    Frost side and top of cake with remaining frosting.

    Makes 16 servings.
