    We had Beans and Hot Dogs every Saturday night at our house.
    They'd be served with cottage cheese, beets, a salad
    and fresh, warm French bread and butter.
    Sometimes Mom used beans from a can but would often make them from scratch using this recipe.

    List of Ingredients




    2 cups dry navy beans
    1 1/2 qts. water
    1/4 lb. salt pork, cut in slices or chunks
    1 1/2 tsp. salt
    1/4 cup brown sugar
    1 tsp dry mustard
    2 tsps. chopped onion
    1/2 cup dark molasses

    Recipe



    Soak beans overnight in water to cover.

    In the morning, drain beans and add to
    1 1/2 qts. water with salt pork and salt.
    Simmer until beans are tender...about 1 1/2 hours.
    Drain, reserving about half the liquid.

    Place beans in a casserole dish.

    Combine reserved bean liquid, brown sugar,
    mustard, onion and molasses. Pour over beans.

    Bake uncovered at 340 degrees for 1 hour or until beans are
    lightly browned on top and are of the desired consistency.
