    All-In-One Breakfast Casserole

    5 to 6 medium potatoes, peeled, cooked and sliced
    12 strips of bacon, crisply cooked and crumbled
    1 small onion, finely diced and sauteed in a bit of oil, until soft and lightly browned
    8 large eggs
    1/3 cup milk
    1/2 tsp. salt
    1/8 tsp. black pepper
    3 Tbsp. finely chopped fresh parsley
    1/2 tsp. dried thyme, crushed
    1/2 cup shredded sharp cheddar cheese

    Preheat oven to 350 degrees.
    Grease a 11-3/4 x 7-1/2 x 1-3/4" baking dish.

    In prepared pan layer potatoes, bacon and onion.

    In a medium bowl combine eggs, milk, salt, pepper, parsley and thyme. Pour gently over potatoes.

    Bake for 25 minutes or until egg mixture is almost set. Sprinkle with cheese and bake for a further 5 minutes until cheese melts and egg mixture is set.

    Serves 8.

    HINT: You can save yourself some time in the morning by pre-cooking the bacon and potatoes the night before. You could also substitute finely chopped green onion (green parts) for the parsley.
