    Easy, Almost-From-Scratch Tomato Sauce

    2 tsp. olive oil
    1 medium onion, diced
    1 tsp. minced garlic (about 3 large cloves)
    1 can (28 oz.) diced plum tomatoes, undrained
    1 can (5.5 oz) tomato paste
    2 tsp. dried basil leaves
    1 tsp. dried oregano leaves
    1/2 tsp. chili powder
    1/8 tsp. freshly ground pepper, or to taste

    In a small pan, heat oil over medium-high heat. Saute onion until tender, add garlic and saute for one minute more. Set aside.

    Pour tomatoes into a 2.5 ltr/quart saucepan and using a hand blender, gently pulse tomatoes until most of the lumps are gone. Stir in tomato paste, basil, oregano, chili powder and pepper along with the onions and garlic.

    Cook over medium-low heat until heated through; about 15 minutes, stirring occaisionally.
