    "Hammered" Pork Loin

    As fun to make and it is good to eat.

    List of Ingredients




    Buy as many thinly sliced pork loin slices as you
    will need, or buy a whole loin & cut very thin
    pieces.

    2 or 3 whole eggs
    1 entire stack of saltine crackers
    black pepper to taste

    Lay each slice of loin on a flat surface (we
    encase each slice in a sturdy large plastic bag
    for this)
    Using the FLAT side of a meat tenderizer, or even
    a hammer, pound out the loin until it is almost
    paper thin. Do this with each slice.Make sure
    every inch is "hammered" !

    Mix an egg wash of 2 or 3 whole eggs & just a
    little water. Beat in medium-sized bowl until
    frothy.

    In another large plastic bag, FINELY crush one
    entire stack of saltine crackers until a coarse
    cornmeal consistency is attained.Pour into large
    bowl & add black pepper to taste.(If you are
    preparing a large quantity, more crackers will be
    needed)

    Now, soak each piece of the loin in the egg wash
    for a few seconds until well coated, then drag
    thru the cracker meal until both sides are
    heavily coated with the mix.

    Heat small amount of oil to medium high in large
    skillet. Cook loin slices until golden brown on
    both sides. (This may take less than 1 minute
    each slice & you will have to add oil if cooking
    more than 4 slices.)

    Serve piping hot.They melt in your mouth!
    These make GREAT sandwiches when placed on RYE,
    or on Kaiser rolls!
