    Recipe Introduction


    These taste just like Mother used to make when I was a child. Only difference ~ the squares are gluten free.

    List of Ingredients




    1 cup chopped dates
    1/2 cup boiling water
    2 tablespoon brown sugar
    1 tablespoon lemon juice

    1/2 cup margarine
    1/2 cup brown sugar
    1 tsp vanilla
    1/2 cup potato starch
    1/2 cup soya flour
    1 cup ground long grain rice
    1/2 tsp baking soda
    dash salt

    Recipe



    Filling: Cook dates, water and brown sugar until soft. Cool and add lemon juice.
    Preheat oven to 350 F. Grease 9x9 cake pan. In separate bowl cream margarine, brown sugar and vanilla. Whisk together dry ingredients. Add to margarine mixture, rubbing with fingers to form a crumb mixture. Press half of mixture into prepared pan. Spread date mixture evenly. Sprinkle remaining crumbs over dates and press in gently with spatula. Bake for 25 minutes. Cool. Cut into squares.

    *Use coffee grinder to grind rice.
