    King Ranch Chicken

    List of Ingredients


    • 1 green peppper, chopped
    • 1/2 med. onion, chopped
    • 1 can condensed cream of chicken or mushroom soup
    • 1 10oz can Rotel tomatoes
    • 6 oz cubed chicken, cooked
    • 4 corn tortillas, torn in pieces
    • 1/3 c. shredded Mexican cheese


    Instructions


    1. Saute green pepper and onion in skillet with Pam.

    2. Add soup, Rotel tomatoes and chicken.

    3. Alternate layers of tortillas and soup mix. Sprinkle cheese on top.

    4. Bake at 325° for 40 minutes or until hot and bubbly.



    Final Comments


    I put the cheese on the last 15 minutes.We also like it with sour cream. The original recipe says tortilla chips in place of the corn tortillas.
