    • 2 pounds fresh snap,pole or string beans
    • 2 oz. salt pork
    • 1 tsp. salt
    • 1 medium onion, peeled
    • 1 medium russet potato, peeled


    Instructions


    1. Break tips off both ends of beans; make sure you get all the strings off. Wash and drain. Cut an "x" in top of salt pork, cutting to but not through rind. Combine beans, salt pork, salt, onion and potato in a large heavy saucepan; add water to barely cover. Bring to a boil; cover, reduce heat and simmer 1 hour.
    2. NOTE: If desired, arrange 12 new potatoes (small red potatoes) unpeeled, on top of beans during last 30 minutes of cooking time.
