    Cashew Brickle

    This is a delightful mellow brickle with the luxury of cashews, everyone loves this once they have tried it, it is an easy recipe, and a success the first time I tried it.

    2 cups sugar
    2/3 cup light corn syrup
    1/2 cup water
    3 TBLS. butter
    1 ts. vanilla
    1/2 ts. baking soda
    2 cups salted cashews

    In a large saucepan combine sugar, syrup and water, bring to a boil, stirring constantly, until sugar is dissolved. Cook, without stirring, over medium heat, until a candy thermometer reaches 300 degrees. Remove from the heat; warm cashews slightly in the microwave; stir in butter, vanilla and baking soda. Add cashews. Pour quickly onto a very generously greased cookie sheet and spread, you will need two more hands for this as it sets up right now. When you remove it from the heat, you will need help. When cool break into pieces.
