    The Ultimate 9 Layer Dip

    This dip came from an old friend of mine. It is absolutely amazing!! It will feed a large group of hungry friends!!
    TIP: It is a little time consuming so I suggest preparing it the night before you have company!!


    List of Ingredients


    • 1 20 oz. jar of Pace Picante sauce
    • 1 20 oz. can of Mexican Refried Beans
    • 2 large ripe Haas avocados
    • 2 tbsp. fresh grated white onion
    • 2 tbsp. minced jalapeno pepper
    • 4 tsp. fresh squeezed lime juice
    • 1 tbsp. ground cumin
    • 1 tsp. salt
    • 5 medium tomatos finely diced
    • 1 block shredded cheddar cheese
    • 1 block shredded monterey jack cheese
    • 3 small cans of sliced black olives
    • 1 16 oz. container of sour cream
    • 1 bunch of cilantro
    • 1 9"x12" plastic or glass pan


    Instructions


    1. THE BEAN LAYER: empty the can of refried beans into a small bowl. Add 1/3 of the jar of picante sauce to the beans and mix well. Spread the bean mixture into the bottom of pan.
    2. THE CHEDDAR LAYER:totally cover the bean layer with your shredded cheddar cheese.
    3. THE GUACAMOLE LAYER:cut your avo's in half and remove the pit and peel. Quickly dunk them in half a bowl of very cold water (to prevent darkening), then drain them on a paper towel. In small bowl mash the avo's leaving some texture. Blend in onion, jalapeno, lime juice, cumin and salt. Stir in about one cup of the chopped tomato. chop the leaves of about 8 stalks of cilantro and mix in. Spread the guacamole even on the cheese layer.
    4. BLACK OLIVE LAYER:open and drain olives and place them evenly over the guacamole layer.
    5. THE MONTEREY JACK LAYER:spread all of the shredded jack cheese evenly over the olives.
    6. SOUR CREAM LAYER:evenly spread all sour cream over the jack cheese.
    7. CHOPPED TOMATO LAYER:spread all but one cup tomatos over the sour cream layer.
    8. CILANTRO LAYER:break off and chop remaining cilantro and place over the top of the tomato layer.
    9. TOP TOMATO AND PICANTE SAUCE LAYER:top with remaining tomato and picante sauce cover and refrigerate for at least 4 hours.


    Final Comments


    This dip is so worth the effort! Make sure you serve with good tortilla chips and even fritos work!!!
