You won't be able to resist this dish. It is perfect for entertaining, and it cooks in just minutes.
List of Ingredients
1 lb. ground beef (chuck quality)
1 large onion, chopped
1 can Rotel tomatoes, undrained
1 can mushroom soup
1 can (10oz.) enchilada sauce
24 corn tortillas, cut into eights
2 cups cheddar cheese, shreddedRecipe
Saute beef and onion. Stir in remaining ingredients (except tortillas and cheese).
Beginning with meat, alternate layers of meat and tortillas in a 13x9 baking dish.
Sprinkle top with cheese and bake at 350 degrees for 35 minutes, or until bubbly.
Serves 6
May be frozen.
