    Eggplant Parmesan

    List of Ingredients




    2 whole eggplant
    2 eggs, beaten
    grated parmesan cheese
    grated mozarella cheese
    bread crumbs

    Recipe



    Wash and slice unpeeled eggplant into 1/2 inch slices.
    Dip eggplant slices in beaten eggs to coat both sides, then into bread crumbs. Chill 1 hour

    In skillet with hot oil, fry eggplant on both sides until golden brown.
    Arrange one layer of eggplant in a baking dish. Pour half of tomato sauce (bought or homemade) over eggplant. Sprinkle with grated cheeses. Repeat with another layer of eggplant and sauce. Top with more cheese. Bake in 350 degree F. oven for 15 minutes.
    Makes 4 servings
