Pumpkin Pancakes

Recipe Introduction
We've been frequenting IHOP lately (we've been twice) 'cuz it's next to a railroad track. They currently have Pumpking Pancakes which all the kids gobble up like candy so I finally decided it would be cheaper to find my own recipe...surprisingly it is also just as good.

Sift together
2 c. flour
2 T. granulated sugar
4 t. baking powder
1 t. salt
1 t. cinnamon
In a separate bowl combine
1 1/2 c. milk
4 egg yolks
1/4 c. melted butter
1 c. pumpkin puree (pumpkin pie filling in a can)
Stir into dry ingredients until just blended.
Beat
4 egg whites
until stiff and fold them into the batter.
Pour onto hot, oiled griddle, about 1/3 cup at a time. (Don't make them too big or they'll be all doughy inside, blech) Cook until tops bubble and turn and cook on other side.
