    Quiche for a crowd

    List of Ingredients


    • 2 1/4 cup flour
    • 1 teas. salt
    • 3/4 cup lard or vegtable oil.
    • 6-8 tbls. cold water, more or less.
    • 12 large eggs
    • 1 can evaporated milk, regular or non-fat
    • Milk
    • 1 teas. nutmeg
    • 3/4 lb. good quality ham, chopped
    • 3/4 lb. cheese. (swiss is great,, kids prefer monterey jack or mozzarella.)
    • 1/2 cup chopped onion.


    Instructions


    1. Preheat oven to 350. Prepare pastry. Mix flour,salt and lard or oil with a pastry blender until the consistency of small pebbles.

    2. Add cold (colder the better) water, one tbls. at a time, until dough starts to form a ball, and cleans the side of the bowl.

    3. Roll pastry on floured surface.

    4. Line pan with pastry, prick with a fork 2 or three times, and place in oven for five minutes.

    5. Whisk eggs. Add nutmeg and evaporated milk and whisk. Add regular milk (or non-fat) until egg/milk mixture is 5 cups.

    6. Mix ham, cheese and onion. Place in pan on pastry crust.

    7. Pour egg mixture over all and stir slightly.

    8. Bake for 45 minutes to one hour, until a knife inserted in center comes out clean.

    9. For a golden top, increase heat to 375 for last ten minutes of cooking.



    Final Comments


    The flavor of the quiche can be changed with different cheese mixtures or ingredients. Try bacon,swiss and onion, or brocolli, ham and cheddar.
