    List of Ingredients


    • 1 box (18.25 oz) lemon cake mix
    • 2 eggs
    • 1/3 cup vegetable oil
    • 2-4 teaspoons fresh lemon juice
    • 1/3 to 1/2 cup confectioners sugar


    Instructions


    1. Preheat oven to 350.
    2. Mix cake mix, oil, eggs and juice in a stand mixer. (Can also be hand mixed in large bowl.) Lemon juice can be adjusted for a more sweet or tart cookie.
    3. Chill dough for a few hours or overnight. (this step can be skipped if you're in a hurry.)
    4. Drop dough by rolled teaspoonful into confectioners sugar and cover lightly.
    5. Put on ungreased cookie sheet and crosshack with a fork.
    6. Bake 6-9 minutes until edges brown. Bottom of cookie will be light brown, and insides chewy.


    Final Comments


    Add 2 eggs and 1/3 cup vegetable oil to any cake mix and you have an easy cookie base. Try white cake mix with almonds and almond extract. Or chocolate cake with walnuts or chocolate chips.
