    List of Ingredients


    • 1 c flour
    • 6 boneless skinless chicken breast halves
    • 3 tbls butter
    • 2 tbls olive oil
    • 4-6 cloves garlic, minced
    • 1 c chicken broth
    • juice of two medium lemons
    • 1/2 lemon, sliced thin
    • 4-6 tbls. capers, drained
    • 2 tbls fresh parsley, flat leaf


    Instructions


    1. Mix flour with salt and pepper in a large plastic bag
    2. Melt oil and butter in a very large skillet
    3. Shake chicken in flour and add to skillet.
    4. Cover, cook on medium, turning chicken until it is browned and cooked.
    5. Move chicken to warm platter and keep warm in 200 degree oven.
    6. In skillet, saute garlic for 10 seconds, scraping up browned bits.
    7. Add broth, lemon, lemon juice and capers to skillet and cook about 10 minutes to reduce.
    8. Add parsley to sauce and pour over chicken to serve.
