    Garlic Lime Chicken

    List of Ingredients


    • 1 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/4 teaspoon cayenne
    • 1/4 teaspoon paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon thyme
    • (or substitute Essence of Emeril for above spices, adding 1 teas of garlic powder to essence of emeril. )
    • 4-6 boneless skinless chicken breast halves (pound if desired.)
    • 2 tablespoons butter
    • 2 tablespoons olive oil
    • juice of a lime, or a small lemon
    • 1/2 cup chicken broth


    Instructions


    1. Mix spices on a dinner plate. Sprinkle on both sides of chicken breasts.

    2. Heat butter and oil in a skillet over medium high heat. Saute chicken until golden brown - about five minutes each side.

    3. Remove chicken to a warm plate.

    4. Add juice and broth to pan, and whisk with brown bits. Reduce sauce slightly.

    5. Add chicken back to the pan, check for doneness, coat with sauce and serve.
