    Recipe Introduction


    An easy meal. Serve with cornbread and a light salad.


    List of Ingredients


    • one boiler-fryer chicken, cut up
    • one onion, chopped
    • one bay leaf
    • two chicken bouilon cubes
    • 3 medium red potatoes, chopped in 1/4 cubes.
    • 2 medium carrots, chopped.
    • 2 tbls. fresh parsley
    • 2 cans cream style corn
    • 2 tablespoons dillweed
    • salt, pepper


    Instructions


    1. Add chicken to a stockpot with six cups of water. Simmer for 45 minutes.
    2. Remove chicken, cool. Strain broth and skim fat. Remove chicken meat from bones, and chop.
    3. Boil broth, adding boullon carrot, and potatoes. Cook for 15 minutes or until potatoes are tender.
    4. Add chicken, spices and corn. Reduce to desired consistency, add chicken and serve.


    Final Comments


    If you like a smooth broth, blend with a hand-blender after step three.
